New Delhi, July 08th 2025: The capital’s iconic landmark, Taj Palace, New Delhi welcomes the legendary flavours of the award-winning Southern Spice from Taj Coromandel, Chennai, with an exclusive pop–up at its celebrated all-day dining destination, Capital Kitchen.
At the heart of this culinary experience is Chef Rajendran, a master of South Indian cuisines and a revered name at the iconic Taj Coromandel, Chennai. With over 25 years of experience, his cooking is deeply rooted in the flavours of Tamil Nadu, honed through years of working across Chettinad, Thanjavur, and Chennai. Trained under the legendary Master Chef Natarajan and inspired by his mother’s kitchen, Chef Rajendran brings authenticity and mastery to every dish.
The menu is a refined showcase of Southern India’s culinary artistry, highlighting a host of signature creations such as Royyala Iguru (prawns simmered in a rich coconut, cashew, and Andhra spice blend), Kozhi Melagu Curry (chicken in a fiery black pepper and fennel gravy), Meen Pollichathu (Kerala-style fish cooked in spices and wrapped in banana leaf), Mutton Pepper Fry (succulent mutton slow-cooked with onion, curry leaves, and freshly ground pepper) among others. Vegetarian highlights include Pachakari Kuruma (seasonal vegetables in a creamy coconut and cashew curry), Kuzhi Paniyaram (crispy rice and lentil dumplings served with fiery onion relish) and more. To finish, indulge in timeless desserts like Elaneer Payasam (a chilled tender coconut delicacy) and Ada Pradhaman (a traditional rice pudding simmered in jaggery & coconut milk).
